Khoya Lassi (Summer Drink)

Khoya, also known as mawa, is a popular dairy ingredient used in traditional South Asian and Middle Eastern cuisines. It is made by slowly reducing full-fat milk to a solid, fudgy consistency by simmering it for an extended period.

The process of making khoya involves boiling milk in a wide, heavy-bottomed pan over low heat until most of the moisture evaporates. The constant stirring prevents the milk from scorching and helps in achieving a smooth texture. As the milk reduces, it thickens and transforms into a solid mass. This can take several hours, depending on the quantity of milk being used.

Khoya has a rich, creamy, and slightly caramelized flavor. It is used as a base for many traditional sweets and desserts like gulab jamun, barfi, and peda. It adds a delightful texture and enhances the taste of these delicacies. Khoya can also be used in savory dishes like curries and koftas to add richness and depth of flavor.

In the market, khoya is available in different forms, including solid blocks, granules, and even canned versions. However, making khoya from scratch at home is preferred by many for its freshness and quality.

It's worth noting that the process of making khoya requires time and patience. Additionally, the milk used should be full-fat for the best results. If you're interested in making khoya at home, you can find various recipes and tutorials online that provide step-by-step instructions.

Here's a simple recipe to prepare khoya lassi:

Ingredients:

1 cup khoya (mawa), crumbled or grated

2 cups chilled yogurt (curd)

1 cup chilled milk

4 tablespoons sugar (adjust to taste)

1/2 teaspoon cardamom powder

A few strands of saffron (optional)

Chopped nuts for garnishing (pistachios, almonds)

Instructions:

In a mixing bowl, crumble or grate the khoya to make it easier to blend.

Add the chilled yogurt (curd) to the bowl.

Using a hand blender or whisk, blend the khoya and yogurt until smooth and well combined.

Add the chilled milk to the mixture and continue blending until you get a creamy consistency.

Next, add the sugar, cardamom powder, and saffron strands (if using) to the lassi mixture. Blend again to incorporate all the flavors.

Taste the lassi and adjust the sweetness according to your preference by adding more sugar if needed. Blend once more to combine.

Once the lassi is well blended, pour it into serving glasses.

Garnish each glass with a sprinkle of chopped nuts (pistachios and almonds) on top.

Serve the khoya lassi chilled and enjoy its creamy and luscious taste.

Note: If you don't have khoya available, you can make it at home by simmering milk in a wide pan until it thickens and reduces to a solid consistency. Keep stirring continuously to avoid burning. Allow the khoya to cool before using it in the lassi recipe.

That's it! You have successfully prepared khoya lassi. Savor the rich flavors and indulge in this delicious drink. Lassi is also beneficial for stomach health.
